This is a great meal for whenever. I use kale, broccoli, spinach or asparagus depending on what I have on hand. I keep chopped spinach and broccoli in the freezer for this meal.
Ingredients
- 2 c. greens of your choice (spinach, broccoli, kale, etc.)
- 10 large eggs, cracked and scrambled
- 2 c. shredded cheese
- 4 oz. jar red pimento
- 1 medium onion diced
- 1 tsp. garlic salt
- 1 tsp. black pepper
Directions
Preheat oven to 350 degrees. Scramble the eggs in a large bowl. Spray 9 x 13 baking pan and set aside. Thaw greens if frozen and press dry with paper towells. Dice onions. Mix onions, greens, pimentos, cheese together and scoop into baking pan. Salt and pepper to taste. Bake for 45 minutes. Top will be slightly brown when done.
Notes
Check for doneness in the center. If runny, cook for additional time.
